Cantaloupe Coconut Refresher

Ingredients 
  • 1 cup cantaloupe chunks
  • ¼ cup fresh coconut flesh (or frozen, thawed)
  • ½ lime (peeled)
  • ½ small cucumber


Steps
  1. Wash produce, peel lime and cucumber if waxed.
  2. Juice in this order: cucumber → cantaloupe → coconut → lime.
  3. Stir and serve over crushed ice.


Tips & Variations
  • For more fiber, blend the juice with extra coconut.
  • Sub coconut with 2 tbsp raw cashews (soaked overnight) for a nutty version.
